Meet Our Chef
Our Story is flavorful. Born in Montagu, our chef Josia (Josh) Conradie has lived a life seasoned with flavor, rhythm, and adventure. After national service, he studied at Silwood Kitchen and trained under renowned French chef Bernard Lion, shaping his signature style — South African soul with a French twist.
His culinary path led through Franschhoek and Stellenbosch, then across Africa and Vietnam, where he and his French wife, Christelle, worked side by side before settling in Swellendam. Together, they opened Christelle’s Bistro in 2019 — their third restaurant and a tribute to their shared passion for food and community.
When he’s not in the kitchen, Josia pursues his love for photography and music, both of which echo through the vibrant spirit of the bistro. He believes in honest cooking, local ingredients, and creating moments worth savoring.

Meet Our Hostess
Christelle is the color of our story; born and raised in a small village in the north of France — a place where food was more than nourishment; it was how people gathered, celebrated, and shared life — she is the muse for this delightful little French bistro. After finishing school, her curiosity carried her across the Channel to England, where she spent ten years immersed in the world of hospitality, learning the art of making people feel at home wherever they are.
That spirit of adventure eventually led her far from Europe to the wild beauty of Zambia, where she worked at a safari lodge — and where she met Josh. Together, they discovered not just a love for each other, but a shared passion for creating experiences that linger long after the last bite. Their journey took them through Africa and Vietnam, collecting flavors, friendships, and stories along the way.
When they finally settled in Swellendam, Christelle’s Bistro became the dream they had always carried — a place that feels both personal and welcoming, where French warmth meets South African generosity.
Her hope is that every guest who visits feels that same sense of home, joy, and connection that inspired its creation.
